Valentine's Day Lemon Cheesecake Stuffed Strawberries
Friday, both kids had parties at school and daycare. I wanted to do a little something different, and NOT send them with plates of cookies and Rice Krispie treats dyed pink, so I decided I was sending them in with fruits and veggies. I made a veggie platter, and then whipped up some cheesecake dip, compliments of my friend Trish. I made her original recipe (2 egg whites beaten till foamy, 3/4 c. sifted granulated sugar, 2 bricks of cream cheese, and some vanilla) and served the dip alongside strawberries and fresh-cut pineapple.
While I was making those, I had a bright idea- I leaned them out, made them a bit more sophisticated by adding lemon zest, and stuffed the berries with the filling, creating a supportive, beautiful, classy dessert that was done literally in no time. They were a HUGE hit!
I beat two egg whites ’till foamy, then added about 1/4 cup of Prograde Vanilla Protein Powder (more or less, do it to your taste). I then added two bricks of softened cream cheese, mixed till blended, and slowly stirred in a capful of vanilla and the zest of one lemon. I cut both the top and bottom of each strawberry off, just so that it would stand on it’s own, stood them up bigger end up (where the stem used to be), took the paring knife and twisted the middle to enlarge the hole, and piped the filling inside. They were BEAUTIFUL!
I topped them off with a bit more zest and some chopped fresh mint, and was left with beautiful, delicious cheesecake-stuffed strawberries. Perfect for your Valentine!
