Pumpkin Doughny-whackers
Pumpkin…what?!
Doughny-whackers.
A.k.a “Donuts.”
Yeah, you’ve got me stumped, too.
When Ben was little, he and his mom used to call Donuts “Doughny-whackers.”
Tonight, I was shopping around a health food store, and found donut tins. I didn’t even know such things existed!
I was planning on trying to trick Tod live on air into eating something pumpkin-y (he said he doesn’t like pumpkin ANYTHING), and so I made the granola, as well as these…uhm..”doughny whackers.” Trickery by Donut. I like it
First, I pre-heated the oven to 325.
Next, I mixed in a bowl:
- 1 c. pumpkin (you can use this method or from a can)
- 2/3 c. applesauce
- 1/3-2/3 c. agave or maple syrup (I like it less sweet)
- 2 eggs
- 2 tsp. vanilla
In a separate bowl mix:
- 1 c. almond flour
- 1 c. gluten free pancake mix
- 1/2 c. flax meal
- 1 tbsp. cinnamon
- 1 tsp. Cardamom
- 2 tsp. baking soda
- 1 pinch salt
Add dry ingredients to wet, mix well, and drop into well-sprayed (non-stick spray) mini or regular muffin pans. You can also do a couple of bread tins.
Bake at 325 for about 8 ish minutes, or ’till a toothpick comes out clean and you’re done!

I have a question for you, I can not have cinnamon as it kills my stomache,is the cardamon a replacement for cinnamon?

Hey Liz!
The cardamon is just a spicy yummy amazingly scented (albeit typically pretty expensive) spice that you can sub if you’d like. Or you can omit altogether.
