Peanut's Peanut Butter Truffles

This Christmas, just before my mom passed away, my sister-in-law and I were both making chocolates like fiends, covering pretzels with chocolate and crushed candy canes, and dipping gummy bears, peanut butter, fruits, and pretty much any other thing you can dip into melted chocolates. German chocolate, dark chocolate, white chocolate, chili chocolate, orange chocolate…any chocolate we could get our hands on! We were trying to keep our minds off of the graveness of my Mother’s condition, I suppose, but also to give as a gift to my wonderful stepdad, Mike, who is a sweets-and-choco-holic. Get his spirits up, I suppose. We playfully talked about opening a chocolate shop because they looked so good. Here’s some of them:

So as I said yesterday, most of the time, I’m simply minding my own business when all of a sudden, a recipe idea will just pop into my head. Today, at work, I was looking for my Prograde stash to make one of my famous Raspberry Latte’s, and I just couldn’t find it anywhere. Stumped, I looked in my desk, my bag, the cupboards, everywhere, and just couldn’t freakin’ find it! Finally, I discovered it-in the freezer, right next to the frozen raspberries that I’d just put back. I laughed a bit about it, wondering if the powder had solidified when it hit me- I wonder if brownie batter (mixture of Chocolate Prograde, natural peanut butter, sometimes berries, and a little water) would freeze? Or…better yet…solidify into chocolates??

Answer: Yes. They do! I could barely contain myself. It was soooo easy and super-quick, and I ended up with these when I was done:

So add a scoop or two of the chocolate powder, about a tablespoon of natural peanut butter and JUST ENOUGH water to make it a consistency where you can roll the mixture, like playdough. You can then refrigerate them till they set, and then roll them in protein powder (if you like the cocoa powder look), coconut, crushed nuts, etc. You don’t actually need to refrigerate first, it just makes it more firm if you want to coat them in toppings like nuts, where the chocolate needs a bit more strength to withhold the topping.

THESE WERE FABULOUS! And with Valentines Day coming right up, guys, you could easily make these for your loved ones!
