Lemon Hummus Stuffed Cukes

This past weekend, I attended a Bridal Show, where I shared a table with none other than Ben Warstler of Ben’s Bootcamps.  We talked to brides about getting the bridal bodies of their dreams, my contribution of course being my supportive recipes.  Here are a couple of pictures of our set up!

While there, we happened to notice another vendor, Market Cafe and Catering.  Their food smelled UNBELIEVABLE, and after scoring some free food, we thought we’d scored big.

We were wrong.

WE’D SCORED HUGE!!  Our plate of samples was EXTRAORDINARY! The Market Cafe believes in much of the same attributes I do, and that’s that local food is better food!  Just think, when you buy local, you’re not only supporting your local economy, but your food is coming from across town- not from across the country or, in many cases, across the WORLD.  When my mom was sick (to read more about that story, click here), I talked to her Oncologist, and he’d mentioned that he believes one of the most imperitive preventative cancer- avoiding strategies is so simple; it’s to eat right.  Aside from the obvious (plenty of fruits and veggies, lots of water to flush the system, etc.)  he’d included to eat, as much as possible, from food sources located within a 60 mile radius from home.  Essentially, to become a locavore.

What’s a locavore?  Here’s the definition from wikipedia:

“A Collaborative effort to build more locally based, self-reliant food economies – one in which sustainable food production, processing, distribution, and consumption is integrated to enhance the economic, environmental and social health of a particular place”

By eating locally, we aren’t just helping sustain and stimulate the local economy, but we’re stimulating good health for ourselves, and our families.  By eating locally, fresh foods are going into our bodies, and not the preservatives that go along with shipping foods across the globe. 

I could go on an on about this; and someday, I will, but I wanted to show you the recipe that I came up with after trying one the fabulous treats from the Market Cafe.

One of the items was a hummus stuffed cucumber.  It was so good, and looked so easy to make!  Considering it was 100% supportive, I decided a do-over for leanKitchen was in order!

So I took a cucumber (I used an organic one, so I didn’t peel it, but if yours is covered with a waxy coating, I’d peel it),and cut the very ends off, then sliced the cucumber every couple of inches.

Next, I scooped out some of the seeds using my melon baller, but left some intact to maintain a “bottom” on the cucumber cup, piped in hummus (storebought is fine, in whatever flavor you like, or, make my hummus), then sprinkled with some lemon zest.  Beautiful, classy, super delicious, and real easy.

Just a side note-if you’re not lovin’ the lemon, you can certainly omit, or use some type YOU love!

    lol, the kids look like they’re thinking “what did my mom make now? we know it will be yummy!” I was going to make some hummus. These sound awesome!
