Harvest Cherry-Peach “Poxiples”
In honor of my bringing a very delicious and fun treat to Tod n’ Deveney of MOO92on the leanKitchen Meal Makeover Radio Show, I bring to you the Harvest Cherry-Peach “Poxiple!”
And, what exactly IS a “Poxiple??”
It’s one of those cute words that your kids say when they’re little, that you almost don’t want to correct when they say them. My son, for instance, used to want to open “all the ‘nindows’” when he was hot.
Now that’s it’s officially summer, my daughter has been asking me for “Poxiples.”
These “Poxiples” are so good that you won’t want to give your kids the sugar-packed, artificially-colored plastic-wrapped sticks anymore!
First, take a handful of frozen or fresh cherries (or whatever berry you happen to have on hand), 1-6oz. container of Greek Yogurt (whatever flavor you like, I used Vanilla Chobani), and another handful of chopped peach.
Reserve a few chunks of the fruit on the side, and blend the yogurt with the fruit with an immersion blender like this:
Next, drop some of the reserved fruit into whatever popsicle containers you have (I used the plastic kind you buy at the grocery store for $1):
Next, pour the yogurt mixture in over the fruit:
(careful not to spill the yogurt between the reservoirs, unlike me : )
..and freeze till solid.
YUM!! And the best part? This popsicle is a supportive meal! Because of the calorie content per popsicle (roughly 200 calories for ALL FOUR pops so 50 calories +/-, depending, of course, on all factors [how much fruit you add, how big your popsicle reservoir is, etc.]) you could even have two! t should be considered a snack though, rather than a meal.
For a tropical treat, add unsweetened flake coconut and chunks of pineapple.
