Spicy Shrimp Stir Fry

So I made some stir fry to top my delicious lK Lo-Carb RICE, and it was so good that I just had to share! First, I covered the bottom of a heavy-bottomed skillet with olive oil.  While that was warming up, I chopped 3 cloves of garlic, pre-sliced mushrooms (prepped-for-me veggies are a huge time-saver!), and peppers (I had orange ones on hand).  I put them all together in a pan, and sautéed, uncovered,...

lK Lo-Carb RICE!!

This is a HUGE deal for me.  I LOVE RICE!!  My mom and I used to eat rice all the time growing up with onions fried in butter, then prepared rice thrown in, topped with Soy Sauce.  Literally best meal EVER… …unless, of course, you’re trying to lose fat. Well, I am trying to lose fat, but I miss rice so much!!  I missed it so much, in fact, that I started doing some research, where...

Jazzed up fruit salad

The other day I had zero time to get ready for a meeting that I’d promised refreshments at.  Given that I am “Miss leanKitchen” herself, people come expecting a treat!  Alas, Miss leanKitchen stretches herself too thin sometimes, too, so I had to cut a few corners.  So I called my local supermarket, and ordered a fresh fruit salad.  TIP: Ask for specific fruit.  That way, you...

Yellow Garlic Smashed Fauxtatoes

These are a SUPER simple, super speedy compliment to any meat dish; particularly steak  (like my Peppered Steak with Portobello’s, or this Garlic Butter Steak and Shrimp).    First, rinse a head of cauliflower (I used this nice yellow head that I found at my Supermarket), and cut it up into large chunks, with three whole peeled cloves of garlic (here’s a tip on how to peel them easily).  Cauliflower Put...

Purple Pizza Rolls

No, I haven’t fallen off the face of the earth, and no, I haven’t closed the leanKitchen.  I’ve just been reaaaallllllly busy.  Yes, I’m always realllllllllllly busy, but at the moment, moreso than normal.  I know I don’t talk a lot about my mom’s passing on here, it’s too personal, and I try to keep this page fun and happy, but I’d be lying if I...

Lobster, Shrimp, and Scallop Scampi

Scampi, one of my favorites. While it does have it’s variations from place to place, one thing remains:  it typically is shrimp broiled in garlic and butter.  A lot of the time, it’s served over pasta.  The reduction/sauce usually also contains wine, which I’ve omitted from this recipe. So to cut corners are far as time went, I bought 1 lb. pre-cooked and shelled lobster (my favorite!),...

How to easily peel garlic

I know it’s weird, but I love cooking with garlic, and eating it by the bucketload, but oddly, I can’t stand it when I’m at work the next day, and my hands smell like garlic!  Garlic Clove With the back of a big knife, press down on an unpeeled garlic clove with the flat palm of your hand till you hear a POP!  One steady motion downwards, and be very, very careful your board, knife...

Pansy Salad

My inspiration tonight was this: My pretty flower-clad girl Ok, fine.  That was just a cute picture.  But seriously, pansies are popping up allll over my yard, and pretty little Johnny Jump-ups.  Tonight, I made a salad with mixed greens, washed some pansies that I picked off my yard, added cherry tomatoes, cukes, and some grilled talapia, and made a GORGEOUS, tasty, springtime salad.  Pansies...

Kale Chips

For the most part, I’m a really great eater; I’ve literally drank maybe 5 sodas in as many years, and that’s because they were mixed with punches, or the only available drink wherever I happened to be.  I don’t ever feel like eating chocolate, I’m not into cookies or sweets.  It’s easier for me to “give up” the bad stuff, because I never got into it...
