VICTORY Vinaigrette
A week ago today, I celebrated a HUGE personal victory in my life. SO, in celebration of my one-week-ago-today Victory, I bring to you my VICTORY VINAIGRETTE!!
To make this, you will need to squeeze the juice from one orange (roughly 3 tablespoons if you happen to have juice in your fridge), then for added zip, the zest of a half an orange. Next, use a whisk to mix in 2 tablespoons of balsamic...

Memorial Day Kickoff- FAUXTATO SALAD!
In celebration of both the unofficial kickoff to summer, as well as the FIRST lK Meal Makeover radio show on MOO92 (!!), I was charged by Tod n’ Deveney to makeover a classic summer staple:
POTATO SALAD!
Deveney told me how her mom used to make potato salad growing up, and here’s what she had to say:
“My mom used to put dill in it – which I love. Mom used to do potatoes, onions,...

"Cajun" Summer Squash & Zukes
You know when you get so many zukes and squash at the end of the season that you make sure to leave your car doors locked, so that people don’t leave bags of squashes on your front seat?? Well, what in the world do you do with it all? There’s only so much fried zucchini, zucchini bread, curried zucchini soup, etc. etc. that one can make. So I made up this creative quick, fried zucchini...

Dharma Chicken Sausages with Onions and Pineapple
SOOO…as many of you know, I am, er…WAS, a HUGE fan of the show LOST. Remember back on day 1 of the last season I made Island Boar with Coconut Rice and Mango Salsa to celebrate? Well, last night there was NO time to spend cooking a big intense dinner; season finale specials lasted pretty much the entire afternoon till 11:30 at night. So, what to do for dinner?
Why, chicken sausages...

Spinach Berry Blast
The other night, I had a hankering for the Chocolate Covered Raspberry Shake, but had no Chocolate Prograde Lean. I did have the Prograde Vanilla Protein Powder, though, so I put 1 scoop Prograde Protein, 1/4 c Frozen Blueberries, 1/4 Frozen Raspberries, 1/4 Frozen Spinach and 1/2 to 1 cup of cold water (more or less depending on desired thickness).
Blend, and ENJOY! I am 150% serious when I say,...

How to quickly thaw frozen spinach
Ben from Ben’s Bootcamps helps me in the kitchen! Take a look!!!
This spinach can be used in dips, shakes, and whatever else you need the color and nutrients of spinach in, but don’t want the slimy mess that goes along with the drippy, juicy muckiness of thawed frozen spinach.

Quick Pineapple Chickpea Salad
This salad was a total concoction of things I had in my fridge, and let me tell you- it WORKED!
DELICIOUS!
I rinsed and drained a can of chickpeas, 1/4 a red onion, 1 clove of chopped garlic, 1/2 a peeled, small cubed cucumber, and about 3/4 cup small cubed fresh pineapple. Top with enough prepared Italian dressing to moisten and flavor, or a drizzle of olive oil, some vinegar to taste, and salt and...

Easy Stuffed Peppers
Real quick and simple guys:
Cut the tops of a few (I used four) red peppers off, remove seeds and ribs.
In a bowl, mix some of my Lo-Carb Rice (Maybe a cup? More or less depending on how big your peppers are) with salsa, and I used roughly 1/4 cup of a Mexican cheese blend (again, more or less, depending on how big your peppers are, how many there are, etc.). Make sure not to add too much salsa,...

Lemon Hummus Stuffed Cukes
This past weekend, I attended a Bridal Show, where I shared a table with none other than Ben Warstler of Ben’s Bootcamps. We talked to brides about getting the bridal bodies of their dreams, my contribution of course being my supportive recipes. Here are a couple of pictures of our set up!
While there, we happened to notice another vendor, Market Cafe and Catering. Their food smelled...

Spicy Shrimp Stir Fry
So I made some stir fry to top my delicious lK Lo-Carb RICE, and it was so good that I just had to share!
First, I covered the bottom of a heavy-bottomed skillet with olive oil. While that was warming up, I chopped 3 cloves of garlic, pre-sliced mushrooms (prepped-for-me veggies are a huge time-saver!), and peppers (I had orange ones on hand). I put them all together in a pan, and sautéed, uncovered,...
