Hallie’s Grilled Steak & Caprese

Today, I officially go on vacation.  When my son was in utero (he’ll be 7 in a week), I took a trip to York, Maine.  With the ocean lapping at my toes, and him in my 9-months-pregnant-ginormous belly, he kicked happy and warm in my belly. I made it a tradition to go somewhere coastal each year in the first week of July ever since.  And that quiet, peaceful sound of ocean waves slapping against...

How to Grill FRUIT!

Ok- you guys are probably getting annoyed with my pineapple kick, but it’s so good!  I use pineapple here, too (shocker!), but I’m thrilled to report that in this recipe, you can also use papaya’s, mangoes, peaches, pretty much any fleshy fruit with some substance.  You can grill bananas, too, but with skin on to maintain the integrity of the fruit.  Though I don’t here,...

Memorial Day Kickoff- FAUXTATO SALAD!

In celebration of both the unofficial kickoff to summer, as well as the FIRST lK Meal Makeover radio show on MOO92 (!!), I was charged by Tod n’ Deveney to makeover a classic summer staple: POTATO SALAD! Deveney told me how her mom used to make potato salad growing up, and here’s what she had to say: “My mom used to put dill in it – which I love.  Mom used to do potatoes, onions,...

lK Lo-Carb RICE!!

This is a HUGE deal for me.  I LOVE RICE!!  My mom and I used to eat rice all the time growing up with onions fried in butter, then prepared rice thrown in, topped with Soy Sauce.  Literally best meal EVER… …unless, of course, you’re trying to lose fat. Well, I am trying to lose fat, but I miss rice so much!!  I missed it so much, in fact, that I started doing some research, where...

Yellow Garlic Smashed Fauxtatoes

These are a SUPER simple, super speedy compliment to any meat dish; particularly steak  (like my Peppered Steak with Portobello’s, or this Garlic Butter Steak and Shrimp).    First, rinse a head of cauliflower (I used this nice yellow head that I found at my Supermarket), and cut it up into large chunks, with three whole peeled cloves of garlic (here’s a tip on how to peel them easily).  Cauliflower Put...

Edamame Asparagus Salad

In the workplace, my entire lunch needs to be all of three things: 1. Fast 2. Good 3. Supportive This one works super well  in all of these departments.  As I talked about in my post “Supportive Nutrition in the Workplace,” I shop at the grocery store across the street on Mondays, keeping an ongoing stockpile of frozen and fresh veggies, and proteins like small bags of pre-portioned,...

Quick Caprese

Traditional Caprese is slices of tomatoes, and fresh mozzarella, served with basil and olive oil.  Some twist it by putting balsamic on as well.  The other night, I saw some fresh basil that looked great on sale, so I picked some up.  The tomatoes, however, were looking sub-par, so I twisted it up a bit.  Here’s what I did. First, I took the basil, and did my favorite herb-trick; I refer...

Anti-pasta Antipasto

I was asked to bring a pasta salad to an Easter Egg Hunt today.  Here’s what I threw together: 1/2 of an 8.5 oz. jar of sun-dried tomatoes (in oil, with the oil dropped into the salad, too) (I sliced the tomatoes in strips), 1 jar of marinated artichoke hearts (mine came with roasted red peppers, as well), a jar of black olives, 1 spaghetti squash (prepared this way, then cooled by cold water...
