Quick Caprese
Traditional Caprese is slices of tomatoes, and fresh mozzarella, served with basil and olive oil. Some twist it by putting balsamic on as well. Anti-pasta Antipasto
I was asked to bring a pasta salad to an Easter Egg Hunt today. Here’s what I threw together:

Renee's Island Mango Salsa
My good friend Renee gave me this wonderful recipe to compliment my own LOST inspired dinner- Island Boar, topped with Mango Salsa and Coconut rice on the side.
Mango Salsa
2 Mangos diced

Roasted Curried Chickpeas
