“Topless” Melon

My friend Jane told me about a trip to the city with friends.  Several of them were chatting, taking suggestions for where to go to dinner.  Jane piped in that she wanted to go to a “Tapas” Restaurant.  Needless to say, they misheard, thinking Jane wanted to go to a muchdifferent place than a restaurant that serves finger foods!  I saw a variation of this on a food show one day, and...

Grilled Peaches with Yogurt and Berries

This one is one that will make you look like such a gourmet!  Similar to the Roasted Pears with Mascarpone, it’s perfect to score some major points with your friends! First, either heat up your grill (or in my case, my grill pan-nice and hot!)-take a peach that’s cut in half and pitted, grill ’till there’s those pretty grill marks I love, and remove from the pan.  Spoon some...

Grilled Watermelon, Arugula and Goat Cheese Salad

Alright guys, yeah, it sounds gourmet.  But I had some watermelon, some arugula, and some goat cheese in my fridge, and..well, this is what happened! First, I grilled the watermelon.  How did I do that?  Well, I got a grill pan nice and hot,  like I taught you in this post for Grilled Stuffed Pork Chops, and paper-toweled the watermelon dry.  I grilled it with weight (see again what I mean in...

How to Grill FRUIT!

Ok- you guys are probably getting annoyed with my pineapple kick, but it’s so good!  I use pineapple here, too (shocker!), but I’m thrilled to report that in this recipe, you can also use papaya’s, mangoes, peaches, pretty much any fleshy fruit with some substance.  You can grill bananas, too, but with skin on to maintain the integrity of the fruit.  Though I don’t here,...

White Wine Sangria

Yup, I’m doing it- In “Spirit” (no pun intended) of Memorial Day, I’m posting a fun, delicious drink, full of fruit.  Definitely not calling it a Supportive beverage in any way, but it bears sharing Sangria is typically red wine and fruit and other stuff that varies from recipe to recipe.  As you know, I can’t ever do anything food-wise by the book, so I used white...

How to select and cut a fresh pineapple

“Just smell the bottom!  If it smells of a strong pineapple smell, it’s ripe!” Ok, well, I’ve stood in the grocery store, nose pressed against the bottom of a pineapple, smelled the strongest pineapple smell ever, and consequently, cut into a hard, dry pineapple.  They pretty much all smell like a pineapple because, coincidentally, that IS what they are! If, however, you smell...

Dharma Chicken Sausages with Onions and Pineapple

SOOO…as many of you know, I am, er…WAS, a HUGE fan of the show LOST.  Remember back on day 1 of the last season I made Island Boar with Coconut Rice and Mango Salsa to celebrate?  Well, last night there was NO time to spend cooking a big intense dinner; season finale specials lasted pretty much the entire afternoon till 11:30 at night.  So, what to do for dinner? Why, chicken sausages...

Penny Pinching Cherry Pitting

Say that title 5 times fast Tonight, I was using fresh cherries for something, and found it quite annoying to keep cutting the cherry in half, twisting and getting one perfect-looking pitted cherry half, and one mashed side, as I fought to get the cherry pit out of the side it was still stuck in.  I don’t have a cherry pitter, so I took a look around online, and found an ingenious way to...

Hallie's Coconut Shrimp with Pineapple Sauce

My friend Hallie was talking about her coconut shrimp the other day, and it sounded so good I had to try it!  So simple, I pre-heated my oven to 425 degrees, rinsed and paper-toweled a pound of cooked shrimp, and poured on a plate some unsweetened, shredded coconut. Next, dip the shrimp and press coconut on both sides.  Put on a cookie sheet, and bake till the coconut is crunchy and slightly browned...

Prograde Pineapple Cooler

This is an AWESOME, refreshing tropical drink made super quick, and super simple! I took 1 scoop Prograde Vanilla Protein Powder, 1/2 cup of fresh pineapple, 1 cup cold water, and a big handful of ice, and blended it.  For an even more tropical twist, either sprinkle with unsweetened flake coconut, or add 2 tablespoons of coconut milk to it.  Enjoy my little taste of tropical Heaven!
