Berry Yummy Ice Cream Cake
I was in the mood for a yummy dessert the other day, that was something I could serve for a couple of non-Bootcamp friends. I wanted it to be pretty, but supportive, and so I immediately thought of a beautiful layered ice cream cake that I traditionally made for my son when he was little for his birthday.
Years ago when I made it, it was neither healthy nor supportive, but it sure was...

MOOve over Chocolate Ice Cream!
Alright, in celebration of being on MOO92’s lK Meal Makeover Radio Show (and making protein-packed ice cream on air) I bring to you a concoction:
Chocolate Ice Cream!
Mix with an immersion blender: 1 cup almond milk (unsweetened) with 2 scoops chocolate protein powder. Pour into ice cream maker, turn on.
Once just about at the end of the process, stir in dark chocolate chips (we’ll...

Coconut Cop-out
Alright, alright. I admit it. For the first time in the history of lK, a recipe got the best of me. I’m not going to talk about it *quite* yet, but hilarity did ensue, that’s for sure.
And I’m not talking about it yet, because when something doesn’t work for me, I’m the person that MAKES it work! So I’ll get it-eventually. And when I do, you’ll...

Mommy’s Great, she gave me Chocolate Cake
Before you go any further, you must watch this:
So when I was a little girl, I remember clearly listening to this (Bill Cosby: Himself) on audio tape with my Grampa, Gram, Mom, and Aunt Valerie in the dining room. I remember everyone sitting with cups of coffee chuckling.
Well, I made chocolate cake- and it’s good enough that you could totally serve it to your kids for breakfast, without...

Z Pops
lK to the rescue!!
Remember when I made the Cherry Peach Poxiples? Well I noticed something; Jasmine isn’t a big fan of regular fresh cherries, and Cam doesn’t exactly jump for joy when a peach is put in front of him. They’ll eat them, but they aren’t the first pick.
Well, throw them together in a frozen form, and they slurped those bad boys up like it was nobody’s...

Protein-packed Peanut Butter Ice Cream Whoopie Pie
Alright, so I’m back from vacation and lK’s already in full-swing! In case you didn’t notice under the lK Travels section, we did a TON in Maine. My kids had such a BLAST, the weather was perfect, and we got to do everything we wanted to (and, of course, some unexpected stuff, too).
We went to the Maine Discovery Museum in Bangor, Maine- a HIGHLY RECOMMENDED BY ME children’s...

Red, White n’ Blue Cups
These festive red, white and blue cups are the PERFECT dessert for your 4th of July BBQ! I got the inspiration from my friend Carla over at the Bee’s Knee’s Kitchen (remember, she made the Fresh Fruit Bruschetta?). Simple to make, with a smooth, decadent, creamy center layer, will make you think you’re cheating!
First, make your layers:
Red Berry layer:
1 cup fresh, rinsed, hulled...

Cinammon Ice Cream
My job here is done.
Really, it is.
I have always have this overwhelming sense of happiness at the prospect, and consequently, the execution of, making over and “leaning out” any recipe. Aside from Mac and Cheese (which I’m still working on!), I can pretty much find ways to make anything supportive..
…everything except ice cream.
Well, the other night I bought some almond...

Harvest Cherry-Peach “Poxiples”
In honor of my bringing a very delicious and fun treat to Tod n’ Deveney of MOO92on the leanKitchen Meal Makeover Radio Show, I bring to you the Harvest Cherry-Peach “Poxiple!”
And, what exactly IS a “Poxiple??”
It’s one of those cute words that your kids say when they’re little, that you almost don’t want to correct when they say them. My son, for...

Grilled Peaches with Yogurt and Berries
This one is one that will make you look like such a gourmet! Similar to the Roasted Pears with Mascarpone, it’s perfect to score some major points with your friends!
First, either heat up your grill (or in my case, my grill pan-nice and hot!)-take a peach that’s cut in half and pitted, grill ’till there’s those pretty grill marks I love, and remove from the pan. Spoon some...
