Carrot Ginger and Chicken Soup
As many of you know, my favorite food is SOUP! One of my all-time favorite soups is carrot ginger. Because it’s basically veggies and broth, it’s not supportive, as there’s no lean protein. Well, I changed that!
First, I softened 3 cloves of garlic, 2 onions, a 1 one or two inch peice of ginger, and roughly ten carrots (don’t bother peeling, I just washed and chopped) in about 4 tbsp. of olive oil.
Once soft, add a 32 oz jug of low sodium chicken broth:
once the carrots are thoroughly cooked through, puree (either with an immersion blender or in a regular blender), and add back to the pot.
I pre-cook my proteins on Sundays, so I had some chicken breasts in the freezer. I took 1-1/2 breasts out, thawed, chopped up, and added to the puree.
It looked like this:
Super-fast, super-delicious, and super, super flavorful. Give this one a try, you won’t be sorry. Yum!!!
And for all my vegetarian friends, simply omit the chicken and subsititute chicken broth for vegetable broth.

Sounds delicious, I can’t wait to try it! I do have one question though. I though carrots were starchy carbs, not fibrous carbs, so I have been avoiding them for months! I certainly hope they are fibrous because I would like to eat them again!
Hi Hallie, They are a starchy carb, but they are ok every now and again. I would choose a carrot or a pea over a potato any day, but if you think about the proportions; there are about six medium carrots per six cups of this soup. Say you eat 2 cups, I would equate it to eating about 2 medium-sized carrots. I find it highly unlikely that you’re going to gain fat by eating two carrots in a day, as long as you’re nutritionally sound everywhere else. If you wanna play it super-safe, maybe eat this as your cheat meal, but to me, I counted this as a compliant meal…I’m also in maintenence, not strict fat-loss mode. Hope this helps!
Thanks Nedah! I’m still in the fat-loss mode, so I may stay away from them for a bit longer! I really want to lose another pant size or two and about 10 pounds. But this will be a great cheat meal for me!
On a different note, were you able to acheive your fat-loss goals on 28 days and now do you feel like you are able to maintain it by just going back to eating supportively?
Yes, if you are in fatloss mode, keep away from them. Sub the carrots with cauliflower for an delicious alternative! or butternut squash would be equally delicious and more supportive.
Yes I was able to acheive my fat loss goals on 28 days for the most part- what I thought in my head that ten pounds would look like didn’t look how I thought, if that makes sense. I figured if I weighed just over 110 lbs that would immediately give me abs. While I didn’t exactly have blubber hanging over my jeans, I didn’t have rock hard abs, either.
Yes, I do believe that fat loss goals plus holding 90% complaince after the fact would absolutely work for maintaining the fat loss. My difficulty isn’t maintaining, or even losing. It’s keeping the 90% complaince. For example, this past month I went on two out-of-state trips, and kids had birthdays, and my stepdad, and my partner, and so it was just a lot of birthday parties, a lot of cake and ice cream, a lot of “im on vacation i can eat whatever i want” mentatlities that got in my way. So that’s where I’m at now, just getting my nose back to the grindstone in that sense.
I’m a perfectionist though…and I’m never 100% fully satisfied!

I agree… I say I want to lose 10 – 15 pounds, but I really not that flabby at all – just a little extra on the hips, thighs and stomach I would like to tone up. Not sure if that will equal 10-15 pounds or not. I feel like I have this ideal weight in mind 115lbs, but I’m not sure it is realistic.
I remember Ben saying in Metabolism Makeover to forget about “realistic” and set the goal wherever you want it. But I struggle with creating too high of expectations or trying to lose weight, when I can’t really change the fact that I have wide hip bones!
Oh, well… I’m a bit of a perfectionist too! So thanks for listening, for the advice and for posting all your delicious recipes. I have no excuse not to be compliant if I am reading your blog!
