"Cajun" Summer Squash & Zukes
You know when you get so many zukes and squash at the end of the season that you make sure to leave your car doors locked, so that people don’t leave bags of squashes on your front seat?? Well, what in the world do you do with it all? There’s only so much fried zucchini, zucchini bread, curried zucchini soup, etc. etc. that one can make. So I made up this creative quick, fried zucchini dish last summer, and made it with dinner last night. I have photographic AND video evidence that it’s so good, even my kids ate it!
(Ok, fine, they love their veggies, but still…)
First up, slice a zuke and a summer squash. The littler, the better!!! Then, heat olive oil in a frying pan, put the slices in, and top with fresh cracked black pepper, sea salt, and none other than Old Bay (have I mentioned this is my favorite?!). Fry them till nice and golden, and here’s how they turn out:
