A couple of nights ago, I had a hankering (love that word) for Shepard’s Pie again, but I didn’t have any yellow peppers, and I had ground chicken instead of beef. So, I did what I do best, and substituted! I had a red pepper and a green pepper, diced them into corn-kernel-sized peices, browned up the chicken, and made it using the same technique as I did the first time. I also omitted the crunchy topping.
Turned out fabulous! Definitely a keeper in this house!
