What’s the first thing people say to you when they see you eating a salad?

“What are you, on a diet or something?!” 

Well, maybe, maybe not.  It happens to me a LOT.  I like salad because I happen to be a veg-a-holic, and my kids like salad because their mom likes salad.  And because we eat supportively (a protein and fibrous carb [veggie or fruit]) each meal), well, we have salads a couple of times a week.  Big gigantic ones with lots of different kinds of veggies, and chunks of chicken, salmon, tuna, beef, ground and seasoned turkey, turkey bacon, hard-boiled eggs, etc. etc.  The list goes on and on.  We oftentimes even omit the most basic part of salad (most people think lettuce=salad), and just have a bunch of veggies with lean proteins added and a homemade dressing. 

“Wait,” people ask me, “how do you make dressing?”

Well, watch as Camron and I make a Red Wine vinaigrette together. 

I’ll forewarn you, as a sidenote, Camron’s reaction to the vinaigrette is not the same as mine.  He is used to Italian herbs and spices, and also a big fan of good ol’ Ranch (what kid isn’t?!), and wasn’t a huge fan of the Red Wine Vinegar.  But he’s 6, and I’m sure YOU are going to LOVE it.

(If you’re not a fan of Red Wine Vinegar, certainly use whatever kind you like.  Balsamic, Apple Cider, even White Vinegar works well with this.)

This recipe is so quick and easy, even a 6-year-old can do it!
